Meet Your Farmer’s Market Vendors: Wilson Fish

Today on our show: Wilson Fish. One of the things I love about living in Seattle is the wide availability of fresh fish. During the spring, summer, and early fall, you can get salmon that’s so fresh, it bears absolutely no resemblance to anything you’ll find further inland.

I interviewed Gene Panida of Wilson Fish at the Bellevue Farmer’s Market on Thursday. (In the interest of full disclosure, I also purchased a pound of King Salmon and a pound of yellowtail. More after the jump.

How Long at the Markets: Wilson Fish has been coming to the markets for 5 years now.

Other Markets: Wilson Fish sells at Bellevue, Renton, Kirkland, Lake Forest Park, Ballard, Wallingford, Puyallup, Proctor and Juanita Farmer’s Markets.

About Wilson Fish: They’re a family run business. Steve Wilson is their fisherman. His sister Jania and her husband Gene Panida handle the business side of things. Their boat is named Deep Threat. They fish weekly, but the length of the fishing run varies. On each run, they can catch 60 salmon. For every 3 salmon, they are allowed to catch 1 halibut. In addition to salmon and halibut, they can take up to 200 pounds a month of yellowtail. The fishing regulations are very strict to prevent overfishing. If they catch a fish today, they have until 10 am tomorrow to notify Olympia of the catch.

How Fresh Is The Fish: Well, that depends on when the boat comes in. They can process and have the fish to market within 12 hours, but no more than 2 days. The fish I purchased yesterday was approximately 18 hour fish.

Favorite Part of the Market: Gene loves talking to the people and hearing how satisfied they are with the fish. Gene has never had to apologize for a piece of fish he’s sold and he’s very proud of that fact.

Favorite Product: Gene loves their smoked salmon. He says they’ve got the only smoked salmon that hits the smoker within 12 hours of being caught. They even smoke some of the very rare White King salmon. They have two varieties of smoked salmon: Red Wine with Maple and Brown Sugar wtih Garlic.
