Tilth – Now With Vegan Tasting Menu
I’ll stay up front that I’m not vegan. I’m not even vegetarian. But this news still makes me happy. If you follow a vegan diet, you can now eat at what I consider one of Seattle’s great restaurants – Tilth.
Chef Maria Hines has created a monthly vegan tasting menu that still focuses on locally grown, organic and seasonal products. The September menu includes:
Smoked Date Tatin with crostini
French Melon with anise hyssop, black pepper, and olive oil
Spelt Berry Risotto with corn milk
Bluebird Grain Farms Farro with sorrel, sweet pepper and artichoke
Peaches with fresh fig and peach coulis
