It’s not fusion at all, they have a lot of the Chinese “fun stuff”, including sea cucumbers, pig ears, tongue… They have both ‘tapas’ and more familiar-sized dishes, like hand shaved noodles, braised dishes and stir fries. The tapas are referring to mostly cold appetizers (not dim sum), like “10 vegetarian delicacies” (lightly marinated shreds of vegetables, mushrooms, tofu-type-stuff, etc), various cold sliced animal parts, a couple dumplings. For entrees there are a few traditional Northern dishes that I haven’t seen elsewhere (this is definitely not a sweet and sour chicken kind of place).
