I’m from DC and just moved to the Seattle area about 2.5 weeks ago (full disclosure: I wrote for the DC metblog). I’m also a longtime vegan. As far as online vegan/vegetarian resources, you’ve missed:

    http://www.seattlevegan.com/restaurants.asp

    http://www.vegseattle.com/r-veg.shtml

The group Action for Animals also has a flyer listing vegetarian and veg-friendly restaurants, that can be found in various places around the city.

Also, there is a place called Sidecar up on University Way NE and 55th. They’re a vegan store that opened up a few months ago (according to the guy working the counter) and they stock harder-to-find items like vegetarian marshmallows and egg replacer, along with dry goods, clothing, lip balm, shoes, etc.
